Highwire Distilling Co is a distillery located in Charleston, South Carolina. They are a craft operation that, like many craft distilleries in the USA makes a huge number of products. Whisky, Gin, Amaro, Vodka, etc. What we are interested in though is the rums they released the Low Country “Agricole”. This rum is made from fresh pressed cane juice from cane grown in the low country of South Carolina. This cane was grown at Lavington Farms, pressed for juice, distilled on a pot still, and aged for 11 months before being bottled at 44%.

Rating: 6/10
I came into this, I have to admit, with incredibly low expectations. The signs were all there, craft distillery making tons of different products, high price point, aged agricole, etc. But, there were good signs too, the actual cane juice base and the pot still mainly. I was wary of the ageing but the touch of oak is nice here as it still retains some of the base salinity and a bit farminess for me. It isn’t like other age cane juice rums I’ve had, but this is a very good release of rum.
