West Indies Rum Distillery 16 Year 2000 “Why Not Toucans?”

This is a bottling of rum done by Signor Fori via Intertrade imports. This rum comes from the West Indies Rum Distillery located in Barbados and was distilled in the year 2000 and is thought to have been distilled on the Vulcan still there. It aged for 15  years before being bottled.

Nose: Hydraulic fluid, Vanilla, Lime Juice, Black Pepper, Grapefruit

Palate:   Medium mouthfeel, Hydraulic fluid, Grapefruit, Vanilla, Black Pepper, Lime Juice, Caramelized Plantain

Finish: Medium length finish, Hydraulic Fluid, Grapefruit, Vanilla, Black Pepper, Caramelized plantains

This is a very good rum, with a flavor profile that reminds me a lot of those more industrial Caroni and St. Lucia Vendome still bottlings. The fruits have a nice touch on toning down the heavy industrial side and as I sit here and sip on it, its really enjoyable at this proof.
