This is a bottling of cane spirit from Colombia produced by El Cruce de las Rocas, who works with farmers in the region of Choachí, Cundinamarca, Colombia to ferment and distill their produce. This bottling was made from cane that was crushed using a mechanical trapiche and the juice was boiled into cane syrup. This was fermented for at least 6 weeks with wild yeasts and distilled on a clay pot still before being bottled with no additives.

Rating: 6/10
This is a very good rum. It has a really powerful green apple note which was not expected given its low proof. Granted, it may come of the still at a low proof given it is distilled on a clay pot still, but even all that considering this is quite tasty.
