Rum et al is a product from Robyn Smith, who runs This Blogs Neat and is also a chemical engineer and former research chemist for a distillery. In collaboration with Dead of Night Distillery they set out to make some experimental rum.
Here we have another release of the rums from rum et al variable series. In keeping with the variable series, all the variables are the same as baseline and dunderclap it’s fermented from 100% baking grade molasses with the addition of 33% dunder for 18-20 days using the distiller’s yeast strain of saccharomyces cerevisiae. this is an extremely small batch, yielding only 18 gal of rum at 75.8% abv.
However, the change here is distillation and this was triple distilled with tails and dunder added into the 2nd and 3rd distillations.

Nose: Brine, Banana, Minerality
Palate: Medium mouthfeel, slight vanilla, Minerality, Brine, cherry, cough syrup
Finish: Short, Brine, Minerality, Peppery, hint of cherry cough syrup on the finish
Rating: 5/10
This is fine. It has decent flavor in there but for me it is not as good as the other rum et al releases I’ve tried. It has a bit of thinness and just a touch of this astringent flavor on the finish that detracts from it overall
