Rhum JM Terroir Volcanique

This is a new bottling of Rhum from Rhum JM which is located in Macouba Martinique. This Rhum is made from fresh pressed sugarcane grown on the Rhum JM Estate. The cane is crushed within one hour of harvest and fermented with French Baker’s yeast for 24 hours. It is distilled on a creole copper column still and aged on site. The rum is aged for 3 years, first in re-charred bourbon barrels then finished in ex-rum barrels that have a heavy alligator char. It is then proofed down and bottled with no additives.

Palate:  Medium mouthfeel, Leather, Raisins, Toasted Brown Sugar, Guava, Figs, Lemon

Finish:  Medium finish, pop of black pepper, leather, Plantains, Figs, Orange, Lemon

You know, usually I am not a fan of young agricoles like this. I find they lose a lot of the things I love about unaged cane juice rhums, and lack any of that rancio that develops from really old agricole. But here they have managed the wood well and this is both vibrantly fruity and has a bit of that old goodness the older agricoles offer. It may not be as well developed as something 10+ years old, but this is just great rum. I don’t factor in price to my scores, but with the really affordable price for this ($40-50) this is a great rum to sip on while hanging out or to pick apart notes.
