This rye comes to us by way of Peerless distillery located in Louisville Kentucky. This starts with a base of Peerless rye aged in new charred oak before being finished in Absinthe casks from Copper and Kings a distillery also located in Louisville. Bottled at cask strength with no filtering or additives, let’s see how it turned out.
ABV: 55.6%
Nose: Anise, raspberry, Herbaceous, Lemon Zest, Vanilla, Coriander
Palate: Medium oily mouthfeel, Anise, Herbaceous, Lemon Zest, Raspberry
Finish: Strong Star Anise, Herbaceous, Lemon Zest, Raspberry, Cherry
Rating: 6/10
This is really quite a strange pairing and bottle. The anise and wormwood is quite strong on the finish, but it really pairs nicely with the spicy herbal nature of the rye. Throw in a bit of fruits and this is a w tasty and weird combo. Its complex as well, so you’ll sit with it for awhile. The only small complaint I would have is the finish is a bit strong and the rye base gets a little lost.
