This Rum is the result of Cane juice based fermentation, which has been distilled at Distiilerie du Simon in Martinique. This comes from Chantal Comte, who in her 40 years of distilling has only bottled four unaged rums, with this being the 4th. Every bottle of this rum sold had portions of the proceeds donated to caribaea.org, which is an organization devoted to conserving bio-diversity in the Caribbean.
ABV: 50.16%
Nose: Floral, Lemon Zest, Earthy, Bell Peppers, Minerality, Mango
Palate: Medium oily mouthfeel, Lemon Zest, Mango, Earthy, Bell Peppers, River Rock
Finish: Medium length finish, Lemon Zest, Mango, Earthy, Minerality, Pear Skin, River Rock
Rating: 6/10
A very good rum, the flavors rock and its very savory and spicy with some nice minerality throw in. A fan of this one and would be happy to sip on it all day, but it doesn’t rise to amazing for me.
