This Clairin is made from a small farm using local cane varietals. Once harvested it is taken to the distillery by donkey and crushed before besing fermented with some sugar cane syrup added and fermented naturally. It is distilled in a pot still twice before being bottled at full proof.
ABV: 55%
Nose: Briney, Olive Oil, Minerality, slight meatiness, grassiness,
Palate: Medium oily mouthfeel. Olive oil, minerality, Briney, grassy, over-ripe mango, orange peel.
Finish: Short finish. Pop of brine, olive oil, lemon zest, black pepper, slight fishiness, over-ripe mango, orange peel.
Rating: 7/10
Overall, a very good offering. Tons of flavor this is just an all-out assault of brine, olives, pepper, and some meaty / fishiness. The touch of over ripe fruits really round it out and make this a delicious addition the Clairin line, one that stands up there with Sajous and Le Rocher for me as some of the best.
