Review #592; Bourbon #137: Watershed Single Barrel OHLQ “Honeycomb”

Watershed is a distillery located in Columbus, Ohio. This past year, they worked with the State of Ohio to release three single barrels that the state liquor entity picked. These barrels were the first time Watershed released anything at cask strength. The bourbon was aged for a minimum of four years in char five barrels, with a three-grain high rye mashbill. The barrels that were made by Speyside Cooperage in Jackson, Ohio.

ABV: 67.1%

Nose: Vanilla, faint green apple, caramel, honey, black pepper,

Palate: Medium oily mouthfeel, heat, black pepper, slight tannins, green wood, sawdust, wet cardboard.

Finish: Medium length finish. Warm. Sawdust, black pepper, faint honey, caramel, green apple.

Rating: 3/10

I wanted to like this, being a local place to me and all (and being a fan of their gin in general). But this is just so young tasting. The grains, green wood note covers and destroys everything good that this has going on. The fruits in it are nice, but the sheer wood note and slightly wet cardboard is just dragging it down for me.
