Distilled in copper, fermented in a pine tank with calcium rich well water, and crushed by a tahona pulled by a “Old Ford Tractor”. This is a delicious mezcal. The huge green vegetalness is there, lots of raw vegetables, spices, and some pops of fruit to balance out the aggressive vegetalness. Some spices and pops of cream cheese pop in for me that make this a wonderfully layered, complex, and refreshing drink. This is one that I am glad to have a backup bottle of, and Atenogenes continues to impress me as a producer.
