This is a 5 Sentidos Tobala Side by Side x2 I will be doing, so let’s see how these all stack up! In the effort of saving space here if you wish for the information on all of these in terms of mashing, cooking etc feel free to ask!
“Buffalo Trace Glencairn”
5 Sentidos Tobala
Mezcalero: “Tio” Pedro Hernandez

Finish: Medium length, Mesquite, campfire smoke, dark vegetals, earthy, olive oil
Rating: 8/10
This one leans way into the savory sides of the flavor spectrum in all the best ways. Tons of rich dark meaty flavors, some mesquite and smoke, earth. This is delicious, balanced, and complex.
“Central Ohio Bourbon Glencairn”
5 Stentidos Tobala-Tobasiche
Mezcalero: “Tio” Pedro Hernandez
Batch: TBTZ01-19MX
ABV: 51.6%

Rating: 6/10
This one is good, it has some sweetness and more vegetation based notes that play well with each other. While it doesn’t rise as high as some of the other offerings here it is still a delicious and complex offering that I would gladly enjoy.
“Unmarked Glencairn”
5 Sentidos Tobala de Cuero
Mezcalero: Alberto Martinez Lopez
Batch:TBCUERO01-10
ABV: 48%
Nose: Leather, slight meat, green vegetals, mint
Palate: lighter, oily mouthfeel. Heavy fresh leather, mint, light smoked meat.
Finish: Short and light, leather, peppery, and slight smoked meat
Rating: 7/10
This one took me the longest to decide, as it is the most unique Mezcal I have ever had. That leather smell dominates everything in a way that is just wonderful and perplexing. Its not overly complex, but I think that the overall profile of the leather with some light stuff sprinkled in tips me to the edge of finding this to be great, even if that may be a little bit due to uniqueness.
“Central Ohio Bourbon Glencairn #2”
5 Sentidos Papalote
Mezcalero: Definto Tobon Mejia
Batch:PT02
ABV: 47.5%
Nose: Perfumey and sweet, strong blueberry and raspberry, cream cheese, vanilla bean, mango
Palate: Medium oily mouthfeel. Bursts of flavor. Mango, Cream Cheese, Vanilla, Blueberry,
Finish: Medium length finish, tart, blueberry, blackberry, cream cheese, lime, vanilla frosting.
Rating: 8/10
On the other end of the spectrum from the Tio Pedro Tobala is this Paplote and whew it it wonderful. So much fruit and tang for days in a way that avoids being cloylingly sweet. This is a complex, balanced, and tasty bottle that I would drink through pretty quickly.
Conclusion:
Overall, this side by side as fun to do. Even though these aren’t all 100% tobala, the sheer amount of uniqueness and variety you get from mezcal and agave based spirits continues to blow me away. Taking into account all of the factors of production for each individual Mezcalero just lends to the immense respect and awe I have for these masters of their craft.
