Review #409; Mezcal #35: Cinco Sentidos Ensemble De 5 Magueys

This offering from 5 Sentidos is a 5 Maguey Ensemble made from 40% Bicuixe, 20 % Madrecuixe, 20% Verde, 10% Espadin, and 10% Azul. It was cooked in a Conical Earth Oven for 6 days, fermented with well water, fired with Guamuchill Mezquite Wood. It was Crushed with a large stone wheel “Tahona”, Fermented for 9 days in pine and sabino tubs. This method produced 115 liters of Mezcal in December of 2019.

ABV: 49.9%

Nose: Strong and Pungent, so much green vegetals. Bell Peppers, Spinach, dirty minerals, Earthy, Black Pepper, New growth spring leaves.

Palate: Medium oily mouthfeel. Warm. Green spring leaves, bell peppers. More delicate minerals, clay, broccoli, zucchini.

Finish: Medium length finish. Warm and Moist. Watermelon, Green Bell Peppers, Black Pepper, Minerals, Earthy.

Rating: 7/10

This is an interesting Ensemble. Its heavy and pungent on the nose, but crisp, light, and refreshing on the palate. Tons of green veggie notes, slight spice, and some light fruits sneak their way in to make this a well-balanced experience. This is one you would grab on a hot day to enjoy for sure.
