Review #403; Mezcal #33: Cinco Sentidos Bixuixe – Atenogenes Garcia

This is an offering from Cinco Sentidos. The plants were aged 12-15 years, cooked in a Conical Earth oven with Guamuchil and Mezquite, fermented for 6 days with well water and distilled on copper stills. This was produced in October of 2019, with a batch size of 62 liters.

Mezcalero: Atenogenes Garcia

Batch: BC04-19MX

ABV: 48.7%

Nose: Spicy, cream cheese frosting, Strawberry, cumin, black pepper.

Palate: Medium oily mouthfeel. Sharp Green Spice, black pepper, allspice, mineraly, earthiness, slight leather.

Finish: Medium length. Sharp Green Spice, Minerals, Earthy, leather.

Rating: 7/10

This is some tasty stuff. It is very savory flavor driven, lots of spice, heavy flavors, and is a bity on the edgier / raw side of the spectrum to me and that is what makes it so tasty. It is slightly leveled out by hints of fruits but this is an aggressive in your face spice, mineral, and savory bomb.
