This rum is from Alambique Serrano and is of the new Vida Nativa line, a line with labels inspired by endemic native live with single casks and blends. This Pico Canoa is fresh pressed cane juice rum that was fermented in steel and pine tanks with wild yeast.  The rum is a blend of cane juice distilled in the Krassel still and aged for 25 months in new French Oak before being finished for 4 months in a red wine cask. The 2nd rum was distilled on a Copper alembic pot still and was aged for 28 months in New French Oak before being finished for 3 months in a red wine cask. These rums were then blended together at cask strength with no additives.

Nose:  Watermelon Jolly Ranchers, Pear Skin, Minerality, Vegetal, Passionfruit, touch of Hay

Palate: Thick oily mouthfeel, Watermelon, Pear Skin, Minerality, Vegetal, Salt, Passionfruit, touch of Hay, coca nibs

Finish:   Long finish, Watermelon Jolly Ranger, Minerality, Pear Skin, Nutmeg, Salt, Passionfruit Vegetal, cocoa nibs.

Rating: 9/10

Once again, Alambique continues its trend of making wild and delicious blends of rum. The watermelon Jolly Rancher note on this is so distinct, but it doesn’t veer into too sweet territory for me. It goes well with the vegetal savoryness the rum still has even after a somewhat heavy cask regiment. The rest of the fruits round it out as do the spices that come with them too. Man, what an incredible blend of rums.
