
Review #1323 Rum #628
This is a single cask of rum from the Krassel family distillery located in Santa Maria Tlalixtac, Oaxaca Mexico. This rum was pressed from cane juice of the Java varietal grown at 2,500-3,800 feet. It was then fermented in stainless steek tanks with wild yeast and distilled in an 8-plate column still. It then aged for 3 years months in an Ex-Cognac cask in a humid climate before being bottled at cask strength with no additives for Mirate, a restaurant and bar in Los Angeles, with some of these bottles being available at K&L Wine and Spirits.

Palate: Medium oily mouthfeel, Apple Skin, Allspice, Ginger, Coriander, Salted Lemon, Basil
Finish: Medium length finish, Apple, Ginger, Vegetal, Allspice, Nutmeg, Salted Lemon, touch of Earthiness
Rating: 7/10
This bottle is a great example of well managed oak that showcases both the base distillate as well as the ex-Cognac oak influence. Savory, fruit, and spices come together to make an easily drinkable expression of rum that you can still sit and pick out interesting flavors with. Alambique really doesn’t miss and this is another example of that for me.
