Alambique Serrano Single Cask #32 Bolillo & Pao De Queijo

Review #1274; Rum #579

This is a single cask of cane juice rum from Alambique Serrano. This rum was made from the java varietal of cane and grown at 2500-3800 feet. The crushed cane then ferments in Pine vats with wild yeast that was distilled in March 2022 on a copper Alembic pot still by Rommel Krassel. It was aged for 28 months in a virgin French Oak cask in a dry climate . They then bottled it at cask strength with no additives for Lucus Assis & Off Premise.

Yet another excellent rum from Alambique Serrano. This one is a spice driven rum that just explodes with flavor out of the glass. They do some really unique things and this is one of my favorite “new” rum brands / bottlings for a reason.
