Review #1495; Rum #794
Here we have another bottling from the Rums of Mexico brand. This rum comes from producer Orlando Vásquez, a 2nd generation cane farmer and first generation aguardiente producer. This was made by milling the juice of freshly cut cane sugar, boiling it, and then passes the syrup into cone shaped wooden molds where it hardens. This unrefined whole cane sugar is known as Panela. The cones are eventually rehydrated, fermented with spring water, and distilled in a four plate continuous copper still.

What an excellent expression of rum. Up there as one of my favorite Rums of Mexico bottlings. Its weirdly savory but with enough sweetness to balance it out. It has a nice minerality to it that makes it quite memorable. The finish lasts forever on it too. Honestly just a super impressive bottling of rum here.
