Here we have a limited release of an unaged cane juice rum from Alambique Serrano. This release was fermented for 25 days with wild yeast in open pine vats before being double distilled in a copper pot still and bottled at a high proof with no additives.

This is certainly the strangest unaged Alambique product I’ve had, but its so damn good. Its really acidic, funky, a bit fruity, with a load of spices to tie this weird trip all together. Its like dinner in a bottle in terms of the flavor profile, with some dessert sliding in to shake it up.
