Mater Yellow Cane

Review #1375; Rum #678

Mater is a new rum brand that comes from the Almba Distilleria Artigianale, a distillery located on the island of Sicily in Italy. Here, the single estate grows and harvest their cane by hand, crush the cane with a small mill, and ferment with oenological yeasts, for 72-96 hours. It is then distilled in a 600 liter pot/column hybrid still. After distillation, the rum is rested in stainless steel before being bottled. This bottling was done with the Yellow Cane varietal and bottled with no additives.

This is a very good rum. A nice pop of fruit sweetness, a bit of brine too. The lemongrass is a nice touch too. For me though, this is a clear step below the Purple Cane release.
