Here we have another Viche from Colombia to try. This fresh pressed cane juice spirit was distilled by maestras vicheras Sofía Arroyo & Rogelia Quiñonez. The cane used was POJ 2878 and it was crushed by a traditional trapiche into juice. The juice was boiled cane juice that was fermented for 5-6 days with wild yeast and distilled on a traditional metal pot still with a wooden lid to proof. It is bottled with no additives.
Sofía Arroyo is the 5th generation of women maestras vicheras, carrying on a strong tradition of female viche makers. Under this brand, she and her aunt also offer an oak-aged viche, a curao (aged and unaged), and a RTD “Negroni del Pacífico”

Palate: Medium mouthfeel, Lime Juice, Brine, roasted bell peppers, hint of mango, black pepper
Finish: Medium length finish, bit of brine, lemon, chlorine, allspice, black pepper
Rating: 7/10
This is great. Packed full of flavor, well balanced, and brings the spices and fruit. They balance each other well and this has the raw vegetal nature of cane juice rums but brings a great amount of fruit to balance out those savory flavors.
