XV – Ron Agrícola del Sinú

Review #1163; Rum #478

Here we have a cane juice based rum from Colombia. This was produced by Destilería Agrícola de Córdoba located in Montería, Córdoba, Colombia. This was made from cane sourced from a local co-op. The cane was crushed into a juice with a mechanical trapiche, fermented for 7 days with brewer’s yeast in the open air. Distilled on a pot still, aged for 6-8 months in ex-bourbon and French oak at 43-54%. It was then bottled with no additives. This particular one was aged for 8 month in ex-bourbon.

This is a very good rum. The base distillate here peeks through the light ageing and just has a touch of oak to round it out. Roasted vegetables, vanilla, a bit of pepper, earthtiness. The vegetalness is the backbone and driver of the rum and makes it very good. This is just really solid rum that is nice to drink.
