I’ve seen a lot of internet hype around Islay Rum Co and reading about them I can see why. Long fermentation times, dunder, etc for some of their experimental releases. For a first entry, I can see the thought as this is appealing and easy to drink. However, coming from Islay, I was not hoping for Peat but hoping for really bold flavors that stood out. This is a bit gentle and I was hoping for more flavor and oomph behind that flavor.
