This is a release of a gin from Castle and Key, a new craft distiller based out of the Old Taylor distillery in Kentucky. This gin is similar in base to their Restoration Release Gin, using their Rye New Make mashbill as the base of the spirit. The collection of botanicals is different in aneffort to evoke a more classic autumn flavors in their gin. Let’s see how it holds up.
ABV: 51.5%
Nose: Pine, cinnamon, Pepper, Ginger, Clove,
Palate: Cinnamon, peppery, red hots, clove, sage.
Finish: Medium length, cinnamon all over, peppery, clove, juniper and pine. Slight salt.
Rating: 5/10
While overall a nice release, for me this is a bit too far on the cinnamon bomb scale for me to be a huge fan of. I bet I could find some good cocktail uses for this gin as the cinnamon is so dominant that it overtakes the others in a way I am not a fan of.
