Review #281: Scotch #96: Ballechin 11yr 2007 Ultimate Whisky Company

The Ultimate Whisky Company

Ballechin 2007 11 yr

This is a heavily peated offering from Ballechin, aged for 11 years in a 2nd fill sherry barrel. The Ultimate as a bottler is based in the Netherlands. Let’s see how this offering stands up.

ABV: 60%

Nose: Savory BBQ Peat, Plums, allspice, Black Tea, Grapes, Wood Spice,

Palate: Medium, oily mouthfeel. BBQ Peat, light smoke, plums, meat, burnt brown sugar, oak.

Finish: Medium length, Lighter peat, smoked meat, raisins, figs, black pepper, allspice.

Rating: 8/10

I really dig this. The peat pairs very well with the refill sherry, and the influence of the spirit and the cask are both on display here. I wish I had bought multiple bottles as this is a very good showing, and one that may disappear too quickly from my bar. This stuff just rocks.
